Carmen’s is originally from Veracruz, Mexico, born in a pintoresc region in Mexico along the Gulf of Mexico, but nationalized Australian.
She loves to celebrate life by cooking, as one of the enjoyments in the Mexican culture is the food preparation, how the food brings the family and friends together, spoiling the palate.
Real Mexican cuisine has very little to do with burritos, hard shell tacos and nachos and everything to do with unique ingredients and hundreds of years of history.
Something that you might dont know that the word “Mexico” is derived from Mexica (pronounced “Me-shee-ka”), the name for the indigenous group that settled in central Mexico in the early fourteenth century and is best known as the Aztecs.

GUACAMOLE : is a sauce prepared with avocado
The name guacamole comes from the Nahuatl “Ahuacatlmolli” translated into Spanish, which consists of the words “ahuacatl” (avocado) + “Molli” (mash or sauce)
- 2 ripe avocados, halved, stones removed, peeled
- 1 small red onion, finely chopped
- 1 garlic cloves, crushed
- 1 small fresh chilli, deseeded, finely chopped
- Half of the fresh lime juice
- Salt & ground black pepper, to taste
Place the avocado flesh in a medium bowl and use a fork to mash until almost smooth. Add the onion, garlic, chilli, coriander and lime juice and use a spoon to mix well. Taste and season with salt and pepper.
